• Manage the operations of the Lodge and Guest House kitchens.

This includes:

o Training and managing kitchen staff

o Controlling food and other waste

o Supervising food preparation and cooking

o Checking temperature and plating of dishes, and establishing portion sizes

o Planning menus, taking into account any dietary requirements of guests

o Keeping a tight control of all kitchen stock

o Ordering stock (food and kitchen supplies)

o Keeping accurate weekly and monthly food reports

o Using weekly and monthly food stock and cost reports to find ways to make savings and optimize profits for the company

o Maintaining sanitation and safety standards in the kitchen according to the health and safety requirements

o Storing food products in compliance with safety practices Requirements

• Great guest relations skills for when you are expected to interact with guests or host meals

• Proven work experience as a Kitchen Manager or Chef

• Hands-on experience with planning menus and ordering stock

• Knowledge of a wide range of recipes

• Familiarity with kitchen sanitation and safety regulations

• Excellent organizational skills

• Excellent team-work skills and the ability to manage a team in a fast-paced work environment

• Flexibility to work during evenings and weekends

• Proficiency with MS excel

• Certification from a culinary school or degree in Restaurant Management is a plus

• Fluent spoken English; ability to speak Zulu is advantageous but not necessary
